This cheese is excellent for grating, and is a fondamental ingredient for typical dishes like Polenta Pasticciata, Ravioli, etc. When eaten, it reveals its distinct consistency and texture. The sweet taste can acquire a somewhat more savoury flavour and ranges to slightly piquant. Its intense taste makes it ideal enjoyed with a good Italian red wine.
