Aubergine rolls

  • - Salt
  • - 120ml Tomatoes Sauce
  • - Ground Pepper
  • - Oregano
  • - 15 Black Olives
  • - 1 spoon Olive Oil
  • - 120g Mozzarella
  • - 12 slices Aubergines

Peel the aubergines and cut 12 slices about ½ cm thick. Salt and recline on a colander to drain for about 20-30 minutes. Heat a griddle and grill well the aubergine slices for 1-2 minutes per side. Put the tomato sauce in a bowl, add salt, pepper, oregano, olive oil and mix the ingredients. Put the grilled slices lying on a tray and sprinkle them one by one with seasoned tomato sauce, a few tiny cubes of mozzarella and finely chopped black olives, chopped basil. Roll up the aubergines forming a cylinder that you are going to lay in a baking dish greased with oil. Bake in a preheated oven for about 15 minutes, then bake the rolls. Serve with fresh basil leaves and extra virgin olive oil.
