Bresaola is a famous product of the Valtellina in Northen Italy. Bresaola is acknowledged by the European Community as a unique gastronomic speciality and thus protected through the PGI.

The careful selection of meat, the secrets of salting and flavouring, the exceptional environmental and climatic conditions, fundamental in the curing phase, constitute the technological mix which make the peculiarity of Bresaola from Valtellina.

Bresaola is firm and elastic, with compact cut, regularly red, slightly darker on the edge and with a delicate scent and lightly spiced. Bresaola's taste is sweet, savoury, never sour.

Bresaola is excellent with Parmesan shavings, rocket salad leaves, extra virgin olive oil and a few drops of lemon juice.

Bresaola is divine with a drizzle of White Truffle Extra Virgin Olive Oil and rocket salad leaves.
