This is the flagship pecorino of Caserta, where cheese made from ewe and cow's milk has been produced for centuries, and where the same ancient traditions are still used in its production. It has intense flavour for such a young pecorino.
Made by the same supplier in Campania from whom we get our Mozzarella.
Ideal with salads and used in elaborate Italian dishes.
