This is a typical product from a small area in the Aurunci Mountains. The recipe has come down through the family to the present generation. The sausage is made only with the best cuts of pork, which includes the 'prosciutto', from pigs which are allowed to roam freely outdoors. This meat is combined with natural and simple ingredients to produce a characteristic flavour with a perfume of spice and citrus (due to chilli pepper and coriander) and a long persistence.
This can be eaten just like cured salami, so thinly sliced with a little bread is the perfect way!
