Mozzarella in carrozza

  • - pepper
  • - salt
  • - extra virgin olive oil to fry
  • - flour
  • - 30g parmesan cheese
  • - 2-3 eggs
  • - stale bread (from the day before)
  • - 1 buffalo mozzarella (dry)

Cut mozzarella into four slices. Halve slices. Remove crust from bread and cut it in the same shape of cheese. Blend eggs with a pinch of salt, pepper and parmesan cheese.
Separately, coat bread and cheese with flour and beaten eggs. Put mozzarella onto bread and stick, sprinkle with a handful of breadcrumbs and fry in well hot oil. Serve two pieces per person.
