Pecorino di Fossa is a peculiar Italian cheese, made with ewe's milk, produced in Central Italy. The name cames from the stone holes where cheeses are put to mature.
The taste is a little bit spicy, it's particularly used as an ingredient for Passatelli pasta, but also as cheese to grate.
It could be accompanied by a sweet wine.
