Spaghetti Omellete

Ingredients (serves 4):
- - Pepper
- - Salt
- - ½ deciliter extra virgin olive oil
- - 40g grated pecorino cheese
- - 80g provolone (sweetish or strong, depending on your taste)
- - 100g provola (smoked mozzarella)
- - 80g Neapolitan salami
- - 4-5 eggs
- - 500g spaghetti
- Pepper
- Salt
- ½ deciliter extra virgin olive oil
- 40g grated pecorino cheese
- 80g provolone (sweetish or strong, depending on your taste)
- 100g provola (smoked mozzarella)
- 80g Neapolitan salami
- 4-5 eggs
- 500g spaghetti
Boil spaghetti, drain and cool. Blend eggs with a little salt, pepper and pecorino cheese.
Mix well with spaghetti. Heat oil in a wide and low pan; pour half quantity of spaghetti, extending well on the bottom of the pan.
Fill with salami, provolone and provola cheese, which has to be previously chopped.
Cover with the rest of spaghetti and brown both sides for at least 8-10 minutes each.
