Torta Caprese
A delicate and light chocolate cake which is quick and easy to make!
- - 3 Eggs
- - 20g Cocoa
- - 15g Flour
- - 250g Ground Almonds
- - 150g Dark Chocolate
- - 200g Icing Sugar + extra for decoration
- - 250g Butter + extra for greasing the cake tin
Preheat the oven to 180C.
Grease a round cake tin.
Melt the dark chocolate in a bowl over a pan of hot water and let it cool for a few moments.
Put the almonds in a food mixer and whizz until they are finely ground
Whisk together the butter and the icing sugar, adding the ground almonds, the melted chocolate, the flour and the cocoa.
Separate the egg yolks from the whites, whisking the egg whites into soft peaks.
Add the 3 egg yolks and the whisked egg whites.
Pour carefully into the greased cake tin and put in the oven for about 35 minutes.
Sprinkle some icing sugar over the top for decoration and enjoy!
