Vegetables Plum Cake
- - 1 sachet Baking Powder
- - 1/2 tsp Salt
- - 3 Eggs
- - 100g Ricotta Salata
- - 100ml Seed Oil
- - 100ml Milk
- - 180g Flour
- - 20g Butter
- - 50g Onions
- - 100g Courgettes
- - 100g Carrots
Peel and chop the onions, wash, peel and grate carrots and courgettes.In a hot pan, melt the butter, add onions and let them fry. Add the grated carrots and courgettes and cook for 5-10 minutes, until the water is fully absorbed. Stir frequently to prevent the vegetables to become brown, then transfer the vegetables onto a plate and let cool. Preheat the oven to 180 degrees.In the meantime, together in a bowl add the flour, baking powder, eggs, milk, salt and pepper, mix well with mixer.Add the vegetables, grated cheese, mix well, this time with a spatula or spoon.Line a mold plum cake with greaseproof paper, then pour in the mixture and make it flat with a spatula or spoon.Bake for 50 minutes, without opening the oven during the first 30 minutes of cooking to prevent the cake deflates.To control the cooking, insert a knife or a tooth stick in the plum cake: if you extract clean, it will mean that the pie is ready.
