Ham and Cheese Omelette

 
  • - Butter to grease the oven dish
  • - 40g Grated Parmesan cheese
  • - 2tsp Breadcrumbs
  • - 180g Smoked Scamorza
  • - 180g Roast Ham
  • - Salt
  • - 200ml Milk
  • - 20g Flour
  • - 20g Butter
  • - Salt
  • - Ground Pepper
  • - 6 Eggs
  • - 30g Butter

How to prepare:

Prepare the white sauce mixing first butter and flour in a pan, then add warm milk and stirring until it boils. Once ready, put it in a bowl and in the meantime prepare omelettes whisking the eggs in a bowl with salt and pepper; put to melt half of the butter in a frying pan (diameter 24 cm), then pouring half of egg mixture previously prepared. Cook this mixture on both sides (help yourself to turn the omelette with a lid if you want), and when the omelette is ready, leave it on a plate big enough. Do so also for the second half of egg mixture. Spread on the omelettes, dividing it, the mixture of white sauce. Arrange the ham half and smoked cheese slices on each omelettes. Roll up the omelette strictly, then wrap the rolls in aluminium foil and let them rest for at least an hour in the refrigerator. After the time necessary, remove the rolls from aluminium and cut into slices about 1 cm. Arrange them nicely on a oven dish greased with butter and cover ed with bread crumbs. Sprinkle the slices of omelette with grated Parmesan cheese and bake for about 15 minutes under the grill preheated oven. Serve your omelette with smoked cheese and ham hot.
