Chocolate Caprese Cake

A delicate and light chocolate cake which is quick and easy to make!
  • - 3 eggs, separated
  • - 20g cocoa powder
  • - 15g flour
  • - 200g icing sugar, plus extra to decorate
  • - 250g butter, plus extra for greasing
  • - 250g ground almonds
  • - 150g dark chocolate

How to prepare:

Preheat the oven to 180C and grease a round cake tin.

Melt the dark chocolate in a bowl over a pan of barely simmering water, making sure the base of the bowl doesn't come into contact with the water. Once the chocolate has melted, leave to cool for a few minutes.

Put the almonds in a food mixer and whizz until they are finely ground.

Whisk together the butter and the icing sugar, adding the ground almonds, melted chocolate, flour and cocoa. Gently stir in the egg yolks.

Whisk the egg whites into soft peaks. then carefully fold into the cake mixture.

Pour carefully into the greased cake tin and put in the oven for about 35 minutes. Leave to cool for a few minutes in the tin, then transfer to a wire rack until completely cold. Sprinkle with icing sugar to serve.
