This lovely 'Norma' pasta sauce is a vegetarian treat, made with salted ricotta, aubergines, basil and garlic. Here, we've given it a colourful twist with the use of yellow datterini tomatoes.
Do you know where the name Norma for this sauce comes from? Actually from the Opera of Rossini, "La Norma" - as mellowy a condiment as this wonderful flavour from Sicily.
Which pasta to have it with? Short penne, possibly rigate, or paccheri are strongly suggested to retain the sauce within the pasta itself!
