Terre di Montagna is located in the leafy and green Monte Cimione hills, the company takes pride in making the highest quality parmesan with little environmental impact in an area that is really far away from pollution following the traditional recipe.
Color: intense straw yellow.
Structure: absent or small holes, very evident, consistent, very friable and soluble granularity, grainy, enriched by the presence of numerous tyrosine crystals.
Smell and aroma: complex, characterized by notes of dried fruit, meat broth with the addition of spicy sensations, especially nutmeg.
Taste: the sweet becomes less perceptible and the savory sensation prevails, sometimes accompanied by a certain spiciness.
