Parmesan is probably the most famous Italian product in the world, an outstanding symbol of the country's produce. Fortunately, you don't even need to be an expert to discern a real Parmigiano before you buy: the outside of genuine DOP parmesan is traditionally stamped all over with the words "Parmigiano Reggiano", making identification easy even on the smallest pieces.
