Toma recalls the dialect name for the cheese of the production area in the mountains and hills of Piedmont, in north-west Italy.
Toma Piemontese is a delicious and versatile cow's milk cheese with strong local character. With a delicate aroma, it is a sweet, creamy, full-flavoured cheese that's soft and really pleasant in the mouth.
Cut it into cubes to add to a salad, or slice thinly to eat with a good glass of red wine; or melt in to your favourite pasta or risotto. Or take a leaf out of the northern Italians' book and use toma instead of mozzarella in a caprese salad.
