This is Italy's number one provolone. Stretched and kneaded by hand, this unusual spicy cheese is produced to a secret recipe by Auricchio, one of the oldest family cheese-making companies of Pieve San Giacomo, in Lombardy.
It's a cheese of outstanding quality, with a strong, sharp bite that makes it suitable for eating sliced, grilled, cooked or grated.
