Mozzarella in Carrozza (Toasted mozzarella sandwich)

Serves 4 (two pieces per person)
  • - extra virgin olive oil, for frying
  • - flour
  • - 30g parmesan cheese
  • - 2-3 eggs
  • - 4 slices day-old bread, crusts removed
  • -
  • - 1 x 125g buffalo mozzarella

How to prepare:

Cut the mozzarella into four slices on the diagonal and halve each one so you have eight pieces. Cut the bread to the same size and shape as the cheese.

Beat the eggs with a pinch of salt, pepper and the parmesan. Transfer to a shallow plate. Tip the flour onto a separate shallow plate. Dip the bread and cheese pieces one by one into the egg, then into the flour, shaking off any excess.

Arrange the mozzarella pieces on to the bread then top with the remaining bread pieces. Heat the oil in a large frying pan until hot, add the mozzarella sandwiches and fry until the bread is golden and the cheese is melting. Garnish with basil and serve two pieces per person.
