Potato, Cheese and Bacon appetisers

  • - 24 slices smoked pancetta, cut in half lengthways
  • - 12 baby potatoes, peeled
  • - olive oil, for greasing
  • - 100g hard cheese, cut into 12 slices

How to prepare:

Cut the slices of cheese and bacon so that they will wrap round the potatoes in one piece.
Cook the potatoes in boiling water for about 10 minutes until tender (check by inserting the point of a small knife). Drain and leave to cool.
Roll a piece of cheese round each potato, followed by a piece of bacon. Wrap a second piece of bacon round each potato on the other side, to hold everything together.
Oil a baking tray and add the appetisers, spacing them out evenly.
Bake at 180C for 20 minutes, until the cheese has melted a little and the bacon is cooked. Leave to cool for a few minutes before serving at room temperature.
