Produced to an original recipe by the Busti family, this cheese, made from organic sheep's milk, is uniformly white and firm-textured with an appealing aroma, while the use of vegetarian rennet makes it suitable for vegetarians. During maturation (at least 45 days) the cheese is preserved in extra virgin olive oil which, in addition to protecting the rind, gives the cheese an attractive natural golden colour.
