Spaghetti alla Carbonara

  • - Ground pepper
  • - 4 Yolk + 1 Egg
  • - 2tsp Olive Oil
  • - 100g Pecorino
  • - 350g Spaghetti
  • - 150g Guanciale

How to prepare:

Put a pan containing plenty of water to boil, salt moderately, considering that the pasta has a very savoury sauce with bacon and cheese. Put then the spaghetti in the water. Meanwhile cut the pancetta/bacon into small cubes or strips, fry it with oil until the fat has not become transparent and slightly crispy, then remove from heat and let cool slightly. Meanwhile, whisk the eggs in a bowl then add the cheese, ground pepper. Add the bacon only once the pasta is drained. Drain the pasta, pour into the bowl and mix it together with the previously prepared sauce.
