Torrone is a soft almond nougat that is not only popular in Italy, but is also widely found in Spain under the name Turrón. These torroncini (little bites of torrone) are made with manna and are a real Sicilian rarity. Manna was referenced in the Bible as the "Bread of Heaven" and farmers in the Madonie region of Sicily still know how to use this heavenly gift today. They extract the sap of the manna ash (plant genus Fraxinus) by hand using careful, traditional methods. The manna has a naturally sweet flavour that allows the conventional sugar content of the sweets to be reduced. The manna also gives the torrocini a special flavour that is reminiscent of honey.
