The fennel pollen harvest is one of the most ancient traditions of the peasant Calabrian culture. Until today an industrial production does not exist: the flowers are picked by hand, they then dry in the sunlight on the terraces of the house and finally pulverized with the fingers and conserved in jars. It is a rare product to find in commerce and it can be only acquired in some little local stores in Calabria. The fennel pollen is a distinctive spice of the ancient Mediterranean culinary tradition, from the Moors to the Greeks, until Calabria. In the kitchen it is aromatic and full of fragrance. It continues to be used to season meat, fish and vegetable.
