Red lentil isn't a particular kind of lentils, but simply lentils without skin.
Select Dry Red Lentils are the fastest cooking lentils, as they don't have skins. During the cooking process, the red lentils change from their red color to a yellow-gold color.
They are great for making purees, Italian risotto and chowders, also to thicken soups enrich them with nutritional substances.
They have the same properties of the other lentils, but have fewer fibers and so they are ideal for a lighter version of lentil dish.
