ORIGINS AND CERTIFICATIONS:
Quality control at Nifeislife has become our mantra. Whilst our IGP Punta d'Anca Bresaola comes from Valtellina, Bresaola of Chianina meat come from the Brianza region of Lombardy, in Northern Italy, which might seem like an unusual choice, yet rendering a top notch product by all standards. The producer, Marco d'Oggiono Prosciutti, is a family run business based in Oggiono, right next to Lecco. The ham maker started business in 1945 and traditionally preserves the original recipes for their raw hams. In 2014, this Prosciutto Maker has received a special prize from the Expo 2015 and the Lombardy Region committee as a "Land re-Innovator" and is so amongst what we call the top 10 "Eccellenze Lombarde" i.e. Lombardy's finest.
The name bresaola dates back to the original "brasaola" used by the first manufactures referring to the salting and drying process through the use of braziers. The "punta d'anca" (top of the hip, it is the tender "salmon" cut, or eye, of the silverside) is the part that is used, which guarantees top quality in all bresaola, beware of all others. La Dolce Chianina is a gourmet product, slightly different from our Valtellina IGP bresaola, but yet with a distinctive and exceptional taste that somehow justifies the fact that it comes from one of the finest hams producers in Italy. It's some sort of a special product: Chianina meat is very well known to be amongst the most prestigious type of beef in Italy, and as such it is regulated by a Ministry Decree (Aut. Min. IT003ET). This bresaola preserves the peppery taste of bresaola, yet giving it a gourmet flavour through a very light herbs aroma. Its name, "La Dolce Chianina" i.e. the Sweet Chianina applies to its tenderness. It is by all means a delicate product. The quality and price are justified by the exclusive hand-processing of all of the producers' bresaola, so that the delicate meat is not "stressed" by its works. It is 100% artisanal.
HOW TO PRESERVE:
Preserve in the fridge and follow the expiry date on the packaging. Our bresaola is available in both our fresh bag option, which is sliced on the day and therefore has a shorter expiry date, or vacuum packed for you to keep in the fridge. Choose the one that is most suitable. If you can, we strongly suggest fresh bag, just because it preserves the freshness of the cut and it gives the product a whole different "breath-ability".
ON YOUR TABLE:
Bresaola is the choice for a fast and light meal. It is part of most protein-rich diets due to its lightness and its filling properties. In most cases they say it is also the only cold cuts that you can afford when on a strict diet. Have bresaola on its own, or with parmesan shavings and rocket (and a sprinkle of extra virgin olive oil and lemon). Or perhaps roll it up with some cheese to make a funny aperitivo.
WHICH ONE TO CHOOSE:
The choice towards bresaola is a tasty and healthy one. Most people would have it because it reminds them of their skiing holidays in Valtellina or because it is simply a lighter option and an incredibly practical one. You should choose La Dolce Chianina if you are after a gourmet product, perhaps not an everyday off-the-shelf solution. Something that has a bit more to it.
