The story of Maffei begins in a small bakery in the middle of the last century, in the eyes of a child watching his grandfather's skilled hands work fresh pasta. It was here that Savino Maffei, the company's founder, learned the secrets of an ancient technique that would fascinate him for the rest of his life and that would lead him, a few years later, to increase his experience in the kitchens of the ships of Italians emigrating to Australia.
The young Maffei chose to return and open a small shop in his native Barletta (Apulia), where he began making orecchiette and cavatelli. That was the beginning of a wonderful family story.
